Ingredients for moist carrot cake:
1 2/3 cup avocado oil (or any mild-flavoured oil)
1 cup granulated sugar
1 cup packed brown sugar
½ teaspoon ground nutmeg
3 ¼ cups all-purpose flour
1 tablespoon vanilla extract
1 pound finely-grated (fresh carrots)
1 tablespoon ground cinnamon
¼ teaspoon ground cloves
2 teaspoons fine sea salt
2 teaspoons baking soda
1 teaspoon baking powder
Optional: 1 cup chopped nuts or ½ cup raisins
Baking Carrot Cake
Follow the following simple steps:
1- Preparation of baking pan: Grease and flour three 8-inch round baking pans.
2- Cake batter: Mix together the oil and sugars, gradually add eggs and vanilla, then the dry ingredients, and then, in the end, add shredded carrots.
3- Pour and bake: Now portion the batter evenly into three baking pans. Bake for 25-30 minutes or until a toothpick inserted comes out dry. Remove the cakes from the oven and let them cool on a wire baking rack.
This rich, creamy, tasty cream cheese frosting recipe can either be made by stand mixer or by hand in a mixing bowl. Both butter and cream cheese should be at room temperature.
This frosting can be stored and used on other desserts as well as the topping.
